EATING ALONE

I  got a lot done again today and I'm well pleased. It's been a very busy day and I feel like a little reward is just about what I need right now.

I finished work  just in time to rush in and shower and race to church and got there just in time. When I got back it was 8:00pm and I was very hungry but cooking for one is a little challenge for me.  I remembered reading Millie's mat yesterday and the thought of seafood was on my mind. I had no scallops but I had a small bag of frozen shrimps in a Thai Cilantro and Lime Sauce in the freezer that cooks in about 8 to 10 minutes.

So I put the shrimps in a skillet with a cover on medium and boiled a cup of water  and added some Montreal Chicken Spice and a cup of couscous and it was ready in 5 minutes. I thought that I needed some green to go with that so trying to use stuff from the fridge,  I mixed a spoonful of Pesto and I really like the combination of couscous and pesto. I also added a small scoop of squash because I had some left over in the fridge. I rounded my meal with a pint of Alexander keith beer. I'm not sure that you would find that combination in a fancy restaurant but I likes it just fine. It filled me up and my hunger is history.

Notice my desert fork. For some reason I prefer eating with a small fork.  JB
