WHAT TO DO ON A LAZY RAINY SUNDAY AFTERNOON

I'm back.....sort of... It's Sunday afternoon and it's raining and I feel lazy. I felt like making something quick to make so I thought, that I would make some Marshmallow Rice Krispy Squares. I had an old bag of marshmallows in the cupboard and I was glad to finally use it.



Only the marshmallows were a bit too old and wouldn't melt in the butter. They just turned a nice caramelized color and puffed up but refused to melt even under prolong low heat. I hate wasting food and I let them cool. They have a nice crispy buttery outer skin and taste even better than roasted marshmallow on a stick. That was the easiest treat I ever made unintentionally.  That's what I did today.

My niece Suzette passed away on Thursday of a brain tumour. She collapsed on Sunday and was taken to the hospital and she died on Thursday. She was 50 years old. Please say a prayer for strength and courage for her husband and son and family. God bless.  JB

    I bet those marshmallows are yummy. I love them toasted on a stick, but browned in buter has to be even better.

    I'm a bit tickled by your marshmallows though. I can't believe they didn't melt. I love rice krispie treats!

  8. I'm so sorry about your niece. My prayers to you and her family. I wish we had the rain you're getting. It's been a dry summer so far. Enjoy those yummy looking marshmallows. I'm about the only one who likes them unless they are transformed into some other treat..like rice krispy bars!

  9. Collapsed on Sunday and died on Thursday! Good lord! no indication whatsoever??? jeeeez! that's too young - 50

    So sorry to read this.... total bummer...

    BUT those marshmallows? what a very cool idea.... I can't think of anything wrong with crispy buttered marshmallows.

    Maybe roll some in the Krispies... HAhaaaa

  10. I tried rolling them in the rice Krispie but it wouldn't stick to them. I even mashed one and it wouldn't stick to the krispies. Very unusual. JB

  21. Julia, soo great to hear from u, but so sorry to hear of your niece. I am thinking of u and all sending thoughts and prayers my husband pasted away a yr ago last thur of a brain tumor.. So i truly feel for u all..again i have missed u!
